American lobster

Catalan Lobster
Ingredients for 3-4 people: 2 lobsters, vegetable stock, fennel, celery, radishes, cherry tomatoes, oil, lemon, balsamic vinegar, salt.
Method of preparation
Defrost the lobster.
Prepare vegetable stock made of salted water, onion, celery and carrot. Boil for ten minutes. Boil the lobster in the vegetable stock for 15 minutes and then cool. Cut the vegetables and season with a mixture of oil, lemon, balsamic vinegar and salt. Halve the lobster lengthwise. Place on a serving tray and garnish with the vegetables.
Linguine with lobster sauce
Ingredients for 4 people: 2 American lobsters, 320g linguine, 160g asparagus tips, 50g peas, 3 spoonfuls olive oil, 50 ml fish fumet, 1 spoonful tomato purée, salt, pepper.
Method of preparation
Defrost the lobsters.
Halve them and remove the meat. Take care not to damage the meat inside the claws. Steam the asparagus tips. In a frying pan, sauté the asparagus and peas in hot oil. Add the lobster meat cut into small pieces. Add salt, pepper, tomato purée and fish fumet. Cook the sauce for 12-15 min. In the meantime, boil the linguine in hot, salted water until "al dente". Drain and stir into the sauce in the pan.
